FOUR SERVINGS
INGREDIENTS
2 eggs, lightly beaten
2 egg whites, lightly beaten
1 tablespoon chopped fresh parsley
salt and pepper
canola oil spray
4 slices wholemeal lavash or mountain bread
100 gm shaved 91% fat-free honey ham
2 medium tomatoes, thinly sliced
50 gm baby English spinach
1. Whisk together the eggs, egg whites and parsley. Season with salt and pepper.
2 Lightly spray a non-stick fry pan with canola oil spray and heat over medium heat. Add the egg mixture to the pan and cook until it just starts to set Stir until the mixture is lightly scrambled. Cook for 2 minutes.
3 Lay the lavash or mountain bread on a flat surface. Divide the ham among the bread and place it along one edge. Top the ham with the egg, tomatoes and spinach. Gently roll up in greaseproof paper to enclose the filling. Cut in half and serve hot or cold.
