TEN SERVING
INGREDIENTS
a few large strips of lemon rind
75ml (5 tbsp) lemon juice
50-75g (1/3 cup) sugar, or to taste
2 egg whites
300ml (1 1/4 cups) boiling water
75ml (5 tbsp) sherry
ice cubes
10 serve mint or lemon balm to decorate
1. Put the lemon rind and juice sugar and egg whites into a bowl or large jug and whisk until frothy.
2. Whisk in the water and whisk for a further 2 minutes, until the sugar has dissolved completely.
3. Pour in the sherry, a little at a time and whisk after each addition.
4. To serve, put several ice cubes into each of two tall glasses, pour over the lemonade and decorate the glasses with a sprig of mint or lemon balm.
