Hard boiled eggs can be stuffed with many different fillings. Use a teaspoon to scoop out the yolks from halved hard boiled eggs, then mash them with the chosen filling ingredients. These eggs are perfect for parties because they can be prepared in advance, then chilled until required.
Soft textured fillings, such as a herb and garlic mixture, cream cheese or flavoured mayonnaise can be spooned into the hollows in the whites using two teaspoons.
Smooth but firm mixtures, such as a paste made from the egg yolk, tomato, chilli and anchovy essence, can be piped back into the egg whites from a piping bag fitted with a fairly large nozzle. Use a swirling motion to give an attractive finish.
