Super Bacon and Egg Scramble

Serves 2.


Ingredients:

  • 6 Manning Valley Free Range Eggs

  • 2-3 rashers bacon – diced

  • 1 tbsp coconut or olive oil or butter

  • 2-3 tbsp milk of choice

  • 1 small Onion – diced

  • Chives – chopped

  • Pre-cooked roasted capsicum

  • Parmesan cheese

  • Sea salt and black pepper

Method:

  1. Whisk 6 Manning Valley Free Range Eggs with the milk

  2. Saute bacon and onion in oil or butter

  3. Fold in roasted capsicum

  4. Add milk and egg mixture to the pan

  5. Cook for a few minutes folding eggs over to scramble.

  6. Fold in chopped chives

  7. Serve with parmesan cheese and sea salt and black pepper
